Sublime

Our 2004 Sublime
is a blend
of 64% Cabernet Sauvignon and 36% Syrah. The Cab and the Syrah are
sourced
from the Algunas Dias Vineyard in east Paso Robles. The wine is
unfiltered.
The result is a bright wine with multiple layers of flavors and just a
hint of oak.

Willow Creek Red

The grapes for
our Willow
Creek Red are 48% Grenache, 47% Syrah, and 5% Petite Sirah. The
grenache
comes from our home vineyard on willow Creek Road, the Syrah comes from
the Algunas Dias Vineyard, and the Petite Sirah from the Howell
Vineyard
in east Paso Robles. The final blend is fruity and lush.
Aged
in french oak barrels,
70% neutral and 30% new.

2005
Cabernet Sauvignon

The grapes for
this wine
come from two east Paso vineyards. One is the silver Horse Vineyard and
the other is the Algunas Dias vineyard. There is also a small amount of
Malbec(about 9%) in the final blend. The Malbec grapes come from a
vineyard
on the east side of Paso behind Meridian Vineyards. The juice was
gently
pumped over the skins to ensure maximum color and flavor extraction.
The
must was fermented to dryness in the tank and the pomace was then
shoveled
into small bins and gently returned to the press with minimum
mechanical
handling. The new wine then went into small oak barrels, mostly neutral
and some new American oak. This wine is full bodied with intense
flavors
of ripe cherry and spiced oak. Its rich, balanced flavor expresses the
characters of the vineyard. The wine is unfiltered.

Petite Sirah

This bottling is
100% Petite
Sirah. The grapes come from the Howell Vineyard in east Paso Robles.
The
wine is unfiltered.
It
is inky in color and
rich in flavor and texture. Fermented in a small stainless steel tank
using
the rack and return method during fermentation. Pressed at 1o brix and
allowed to finish fermentation in the barrel. Aged in French and
American
Oak.

2005
Syrah
Paso

The grapes for
our 2005 Syrah
come from the Victor Hugo vineyard in east Templeton. The wine also
includes
a small amount of Petite Sirah from the Howell Vineyard in Paso
Robles.The
grapes were gently pumped over the skins during fermentation to achieve
maximum extraction of color and flavor. Fermentation was finished in
small
French and American oak barrels (30% new and 70% neutral). The wine is
unfiltered.

Zinfandel

The grapes for
our Zinfandel
come from a vineyard located west of Paso Robles. The final blend
consists
of 75% Zinfandel, 15% Grenache, and 10% Petite Sirah. The Grenache is
sourced
from a Tempelton vineyard(Allegre) and the Petite Sirah from a east
Paso
Vineyard(Howell). The result is a richly flavorful wine with a
harmonious
balance of oak and fruit. The wine is unfiltered and has a dark, rich
berry
flavor and would be a perfect complement to a hearty meal.
